Bananas have a low GI and will release energy slowly into your bloodstream, sustaining your energy levels throughout the day. This makes them the perfect snack before exercise or for your children’s lunchbox.

Ingredients:
 
* 6 bananas, peeled and halved lengthways
* 3 tbsps. brown sugar
* 1 teacupful orange juice
* 1 cup of desiccated coconut
* whipping cream or custard
Instructions:
* Place the bananas side by side in a buttered ovenproof dish and pour the orange juice and sugar over them
* Sprinkle with the dessicated coconut and bake in a moderate oven for ten minutes
* Serve hot with whipped cream or custard
