YOUR 7-DAY SUPERWEEK MENU PLAN
Choose one option each day from the following breakfasts, lunches and suppers….
BREAKFAST

- Porridge with one dessert spoon of single cream
- Half a grapefruit and a two-egg omelette
- Fruit salad with greek yoghurt and a dribble of honey
- 1 banana on two slices of toast
- As much fruit as you like
- 1 glass of orange juice, scrambled eggs, mushrooms
- 1 fresh peach, natural yoghurt and honey
LUNCH

- 1 bowl of home-made coleslaw with low-fat cottage cheese on the side. Fresh fruit
- Vegetable soup. Wholemeal roll with a little butter
- Grilled mushrooms on two slices of lightly buttered toast. Green salad with French dressing
- Tomato and black olive salad with two slices of wholemeal bread
- 1 bowl of pasta and spring onion salad. Fruit
- Jacket potato with 2 tbsps sour cream and chives. Mixed vegetable salad
- 1 wholemeal pitta stuffed with salad
DINNER

- 1 chicken breast with lemon juice and white wine marinade. Mashed parsnips and carrots. Baked apples
- 4 grilled sardines with mustard. Cheese with celery
- 1 grilled red mullet. Spinach. Pears
- Vegetable risotto. Fruit salad
- 1 bowl of spaghetti with garlic and olive oil. A banana
- 2 large slices of roast beef with green beans and mixed salad. A matchbox-sized piece of cheese and celery
- 1 chicken breast baked with rosemary. Ratatouille. Green salad. A baked apple
SWEET TREATS
- Toffee bananas- serves four
Heat the grill to red hot. Peel four bananas and lay them in a shallow ovenproof dish. Sprinkle them with two tablespoons of brown sugar and pour four tablespoons of dark rum around them. Place under the grill until the rum and sugar bubble. Serve immediately with greek yoghurt.
- Orange mango fool – serves four
Peel two ripe mangoes, remove the flesh and put it in a blender. Add 150ml of greek yoghurt and the juice of half an orange and process until smooth. Chill. Decorate with the grated rind of half an orange and serve.
What are Complex carbs….
There are two types of carbohydrates, simple and complex.
- Complex Carbs = GOOD Think potatoes, bananas, vegetables, brown rice, oats and cereals. The body takes longer to digest and absorb them, so they provide a slower release of energy and keep us feeling full.
- Simple Carbs = BAD Think sugars- biscuits, soft drinks, chocolate etc. They’re digested really quickly and converted to fat and often leaving us feeling hungry.
